When the reserve button is greyed out, you are unable to book that reservation. The most common reason is that the booking window is not open yet.
For most businesses, the booking window opens one week in advance of the date of the reservation, at noon. We release spots at different times throughout the week leading up to the reservation (not to mention people cancel their spots too), so we encourage you to check back on your favorites often to see when new inventory is released.
